Apple Cake

Tamra Davis, a mom, filmmaker, and blogger, brought her kids outside the city for a weekend apple-picking excursion to a farm. It’s great to see the orchard where the apples come from and to eat while you pick the fruit. You can chop up the apples while the kids play and then have them help add the other ingredients. Apple sauce is a great substitute to cut down on butter use. Serve the cake for dessert or breakfast and save some for your own snack too!

2 ½ cups chopped apples (or two large apples)
1 cup sugar
½ a stick or 2 ounces of melted butter
½ cup applesauce
1 egg
1 ¼ cup flour
½ teaspoon ground cinnamon
½ teaspoon baking soda
½ teaspoon salt
¾ – 1 cup chopped walnuts
Preheat oven to 350 degrees. Grease your baking dish. Mix the sugar, butter, applesauce, and egg together with a hand mixer. Whisk the dry ingredients together. Blend the wet and the dry ingredients and then add the apples and walnuts.
Pour into your baking dish and bake for 30-50 minutes (depending on your pan and oven temp) or until the knife or toothpick is clean when inserted.
