Black Bean Tostadas

Recipe:
Start by preparing the corn relish. In a medium sized bowl blend the corn, tomatoes, green onion and avocado and season with juice of one lime, set aside. Next, prepare tostadas by brushing your tortillas with a little bit of olive oil on both sides and generously covering them with black beans and shredded cheese. Feel free to season your beans as you like them, this recipe suggests using garlic salt and chili powder. Bake your tostadas at 475 degrees for 10 minutes. Once ready, top the tostadas with relish. Voila! You have a tasty and healthy snack.
Kid-friendly version:
Use same ingredients except bake tostadas with cheese only (almost like pizza) and cut into bite size servings, serve along relish and beans.

Ingredients:

• Juice of 1 lime
• Four cups of corn
• One bunch of chopped scallions
• One cup of diced grape tomatoes (quartered)
• One diced avocado
• Corn or flour tortillas
• Olive oil (for brushing)
• One can of black beans (seasoned with garlic salt and chili powder)
• Grated cheese (amount optional)
