Cucumber Dill Soup

Bill Telepan, celebrity chef and restaurant owner, and his daughter make soup for a mother’s day picnic. A fun cooking with kids recipe that is good for a spring or summer picnic. It’s like a cucumber and dill smoothie. Have kids mix the ingredients together and help blend the mixture. Cooking with kids allows them to explore foods that they might not like themselves, but might learn to enjoy cooking for others and to develop a more diverse palate

Puree chopped cucumber, scallions, and dill with buttermilk, yogurt, garlic, some lemon juice and salt. Then add puree to chunky cucumbers and mix together. Refrigerate for a cool summer soup. Add salmon or enjoy with tuna sandwiches as per your preference.
