A great way to introduce your family to the benefits of eating fresh food and the importance of understanding where our food comes from. In this video Laurie and Bella pick artichokes straight from her home garden and steam them to create a simple light dinner or appetizer. Artichokes are a great food, full of nutrition and they are fun to eat which makes them appealing to young children.

Recipe:
Artichokes are super easy and quick to prepare. All you need is a large pot of boiling water with salt and then carefully place artichokes sitting up so that the leaves are slowly steamed. Trim the ends of the stalk so that they don’t tip over while cooking, you may also trim about 2/3 of an inch off the top of the artichoke. Cook for 25 to 45 minutes or until the outer leaves can easily be pulled off (keep in mind that the fresher your artichokes, the less time it will probably take to cook). Laurie serves them plain since they are fresh and so full of flavor but you can also accompany them with warm butter, mayonnaise or a homemade herb vinaigrette. Don’t forget to remove the artichoke heart, scoop out the choke, then eat it up! This is the tastiest part of the plant. Enjoy!

- pinch of salt
- water (enough to cover a couple inches in pot)
